This class will be a delight not just for vegans and vegetarians, but also those who may be interested in transitioning to a meat and animal product-free diet, or simply those who are curious and want to learn a new way of cooking! Planned Menu: Jollof Rice with Salad and Soulad drink. Jollof rice is a flavourful and popular rice dish originating from West Africa. It’s a one-pot meal made with long-grain rice, tomatoes, onions, chilies, and spices. While the basic ingredients remain consistent, variations exist across different regions and countries. About this class: • One session • Maximum of 8 students • Great group activity • Be sure to bring a reusable container in case you have any leftovers! Your instructor: Virgo Kwabena Adalete is a vegan chef from Ghana, West Africa. He has been a vegetarian since 1996, and is passionate about nutrition and sustainability. As a child in his home village, Virgo learnt how to farm, harvest and prepare traditional Ghanaian staples such as cassava, corn, millet, taro and rice, as well as vegetable crops such as tomatoes and chillies. Virgo learnt how to cook traditional Ghanaian food from his grandmother, assisting her cook for large-scale community events and celebrations. He uses traditional Ghanaian cooking processes to prepare 100% vegan food, including African plant based proteins, to create delicious, nutritionally balanced meals. He makes a point of sourcing fresh, local, spray free produce, such as pumpkin, root crops, plantain, moringa and seasonal greens, along with key elements such as tofu, ginger, black eyed beans, rice, and select African ingredients. Virgo’s goal is to promote sustainable living and healthy lifestyles through food and introduce Australians to West African food and culture. He looks forward to sharing his culture with you!
